METHOD FOR STABILIZING OMEGA-3-POLYUNSATURATED FATTY ACID CONTAINING ACYLGLYCEROL AGAINST OXIDATIVE DECOMPOSITION, CONJUGATE OF GAMMA-CD WITH ACYLGLYCEROL AND ITS USE

PROBLEM TO BE SOLVED: To stabilize ω-3-polyunsaturated fatty acid-containing acylglycerol by batchwise or continuously mixing γ-cyclodextrin with γ-3-polyunsaturated fatty acid-containing acylglycerol to form a conjugate. SOLUTION: ω-3-Polyunsaturated fatty acid-containing acylglycerol (A) is added to an aqueous solution of γ-cyclodextrin (B). The concentration of the aqueous solution of component B is desirably 5-60 mass %. The ratio of component A to component B is desirably 0.1:1 to 5:1 by weight. It is desirable that the mixing is performed at a temperature higher than the freezing point and is up to 80 deg.C for one hour to several days under atmospheric pressure in a nitrogen or argon atmosphere. The component A content of the conjugate is desirably 5-50 mass %. Component A is desirably a monoacyl-, diacyl-, triacyl-, or alkyl-modified glycerol or glycerol-phosphoric acid each having at least one ω-polyunsaturated fatty acid.
