摘要 PROBLEM TO BE SOLVED: To provide a washing and treating method of food ingredients consisting of vegetables and fruits that can efficiently and surely sterilize colon bacillus and general bacteria, without damage to flavor and taste because of no remainder of chlorine smell in the food ingredients, hardly causing browning to the food ingredients after treatment by improving the washing and treating method of food ingredients. SOLUTION: An alkaline water formed by the electrolysis of water on cathode side with a pH of 8-11 is used to wash vegetables or fruits, then preferably they are washed with bactericidal ethanol aqueous solution or an acidic water formed on anode side, and finally the washing vegetables or fruits are treated with the water of pH 4-6 prepared by mixing the alkaline water with the acidic water formed by the electrolysis of water. When vegetables and fruits are washed with the water of a prescribed pH prepared from the electrolytic alkaline water and the electrolytic acidic water, the mixed water of low gaseous chlorine content and high HClO concentration is used, thus they are efficiently disinfected with no smell of chlorine.
