PROBLEM TO BE SOLVED: To prepare a cake excellent in quality, shape retention and preservability, having low calorie and capable of making sweetness of a sweetener such as sugar, and the like, mild by making the cake contain a specific glucan. SOLUTION: This cake contains a glucan obtained, e.g. by acting cyclodextrin glucanotransferase to starch and having 1 cyclic structure constituted of at least 14 of α-1,4-glucoside bonds in the molecule. The cake contains a glucan having an internally branched cyclic structure and an externally branched structure, and >=50 degree of polymerization. The cake such as purine, Bavarian cream, jelly, yogurt, and the like, having a milder sweetness in comparison with a non-blended cake is obtained by blending the glucan. |
