Heat-resistant mannose isomerase which is excellent in heat stability, can be used at a temperature of 55 to 60 DEG C continuously over a long time, originates in a bacterium belonging to the genus Agrobacterium and has, for example, the following enzymological properties: (a) function: converting D-mannose into D-fructose or vice versa; (b) substrate specificity: isomerizing D-mannose and D-lyxose, as an aldose, each into the corresponding chitose but not acting on D-glucose, D-galactose, L-mannose, D-xylose, L-xylose, D-arabinose, L-arabinose and D-ribose; (c) optimum pH value: 7.5 to 8.5; (d) optimum temperature: 55 to 60 DEG C; and (e) stable pH range: 6.0 to 10.0. |
