PROBLEM TO BE SOLVED: To produce the subject material usable for production of a fructose by liquefying a starch emulsion with the assistance of anα-amylase, saccharifying the obtained liquid with the assistance of a sugar-synthetic enzyme, and separating a crude saccharified hydrolyzate by a nano filtration through a membrane. SOLUTION: This method is a method for producing a starch hydrolyzate having a high dextrose content. The method comprises liquefying a starch emulsion with the assistance of anα-amylase to provide a liquefied starch emulsion, saccharifying the liquefied starch emulsion with the assistance of a sugar-synthesizing enzyme to provide a crude saccharified hydrolyzate, and separating the crude saccharified hydrolyzate by a nano filtration through a membrane to collect a nano-filtrate constituting the starch hydrolyzate having a high dextrose content and a nano filtration residue to provide the objective starch hydrolyzate useful as a raw material for producing a sorbitol, a substrate for producing a fructose, a raw material for producing a crystallized dextrose, or the like, and having the high dextrose content.
