PROBLEM TO BE SOLVED: To produce a lactic acid-fermented food containing a large amount of γ-amino butyric acid by inoculating a specific lactobacillus on a medium containing a defatted milk and tomato juice, mix-culturing for performing a lactic acid fermentation of the defatted milk to obtain a fermented milk containing γ-amino butyric acid for utilizing natural glutamic acid contained in the foods. SOLUTION: This method for producing a lactic acid fermented foods is provided by inoculating at least 2 kinds of the lactobacilluses such as Lactobacillus bulgaricus and Streptococcus thermophilus on a medium containing defatted milk and a tomato juice, and mix-culturing these lactobacilluses for performing the lactic acid fermentation of the defatted milk to obtain a fermented milk containing γ-amino butyric acid. Also, by inoculating at least 2 kinds of the lactobacilluses such as Lactobacillus helveticus and Lactobacillus casei on a medium containing defatted milk and a tomato juice and mix-culturing these lactobacilluses for performing the lactic acid fermentation of the defatted milk to be able to obtain a fermented milk containing γ-amino butyric acid. |
