PURPOSE: A moisture controlling device of unpolished rice and a method for controlling moisture contained in polished rice are provided which supply unpolished rice before pounding with water, heated air and steam and rapidly penetrate water into the unpolished rice by mixing the unpolished rice with a screw-type wings. CONSTITUTION: The device comprises: (i) a hopper(110) where unpolished rice(100) is supplied; (ii) a vibrating device(120) which vibrates the hopper(110) to fall down a fixed amount of the unpolished rice(100); (iii) a water-supplying device(150) which sprays water to the unpolished rice(100) fallen down from the hopper(110) through a nozzle(158); (iv) a water-supplying pipe(130) which is fixed on the nozzle(158) and guides a flow of the unpolished rice(100); (v) a transferring pipe(160) where the unpolished rice(100) fallen down from the water-supplying pipe(130) is transferred; (vi) a transferring wing(164) which is formed as a screw-type along a first rotating axis(162) installed in the transferring pipe(160) to compress-transfer the unpolished rice(100); (vii) a first mixing pipe(170), a second mixing pipe(180) and a third mixing pipe(190) where the unpolished rice(100) supplied from the transferring pipe(160) is continuously transferred; (viii) a first mix-transferring wing(170), a second mix-transferring wing and a third mix-transferring wing which are intermittently formed as screw-type along a second rotating axis(172), a third rotating axis(182) and a fourth rotating axis(192) respectively installed in the first mixing pipe(170), second mixing pipe(180) and third mixing pipe(190) to mix and transfer the unpolished rice(100); (ix) a driving motor(200) which rotates the first rotating axis(162), second rotating axis(172), third rotating axis(182) and fourth rotating axis(192); (x) a heat-ventilating device which respectively supplies the first mixing pipe(170), second mixing pipe(180) and third mixing pipe(190) with heated air; and (xi) a steam-ventilating device which supplies the first mixing pipe(170) with steam. The method comprises: (i) an unpolished rice supplying step which uniformly supplies a water-supplying pipe(130) with the unpolished rice(100) supplied to a hopper(110) with vibrating it with a vibrating device(120); (ii) a water-supplying step which sprays water with a water-supplying device(150) to the unpolished rice(100: (iii) a first mixing step which compresses and transfers the unpolished rice by rotating a transferring wing(164) formed on a first rotating axis(162); (iv) a heating and moisturizing step which supplies the unpolished rice(100) with heated air and supplies it with steam by a steam-ventilating device(230); (v) a second mixing step which mixes and transfers the unpolished rice(100) by rotating a first mix-transferring wing(174); (vi) a second heating step which supplies the unpolished rice with heated air; (vii) a third mixing step which mixes and transfers the unpolished rice(100) by rotating a second mix-transferring wing(174); (viii) a third heating step which supplies the unpolished rice with heated air; (ix) a fourth mixing step which mixes and transfers the unpolished rice(100) by rotating a third mix-transferring wing(174); and (x) an unpolished rice discharging step which discharges the unpolished rice through an outlet(196).
