PROBLEM TO BE SOLVED: To provide a method for producing boiled and steamed noodles having excellent characteristic in loosening property of noodles and having good taste and texture in cooking, etc., such as re-boiling or frying when noodles are eaten without cooking and obtain a composition spraying or immersing into these noodles. SOLUTION: This composition for improving loosening property of boiled and steamed noodles features comprising a triglycerol fatty acid ester in which purity of triglycerol is >=70% and the fatty acid is an unsaturated fatty acid and the ester is a monoester. This method for producing boiled and steamed noodles features comprising spraying the composition onto the surface of noodles or immersing the composition into the noodles. |
