<p>The present invention relates to a solid butter composition comprising a fat phase and at least 25 percent by weight with respect to the total weight of the butter composition of an aqueous phase, the fat phase comprising one or more fractions of substantially water free milk fat and being substantially free of vegetable oils, the aqueous phase comprising acidified sweet buttermilk. The sweet buttermilk has preferably been acidified to a pH of between approximately 4 and the pH of sweet buttermilk. Preferably, 51-100 % by weight of the aqueous phase is constituted by acidified sweet buttermilk, the remaining being mainly water.</p> |
