摘要 PROBLEM TO BE SOLVED: To improve comfortableness of a kitchen environment by operating exhaust equipment when a state in an ambient air environment becomes uncomfortable, or unhealthy and unsafe, and by increasing selectively the volume rate of exhaust air. SOLUTION: Facilities 10 such as a restaurant comprise a kitchen 12 provided with a plurality of commercial cooking units 18 and an adjacent room 14 such as a dining room, and the two rooms 12 and 16 are separated by an internal wall 16. Besides, the kitchen 12 has a heating, ventilating and air-conditioning unit 30 for keeping an internal environment 28 in a desired state and kitchen exhaust equipment 32 including an exhaust hood 34 which is positioned above the cooking units 18 and communicates with an exhaust assembly 36 through a duct 38. Moreover, the kitchen is equipped with an air supply unit 60 introducing air from an external environment 26 to an ambient air environment 28 in the kitchen 12, in order to compensate the quantity of the air exhausted by the exhaust equipment 32. Comfortableness is improved by increasing the volume rate of the exhaust air from the exhaust equipment 32 according to the environmental state of the kitchen 12.
