PROBLEM TO BE SOLVED: To obtain a preparation for food additive, excellent in dispersibility and antimicrobial action, by coating a hydrophilic food additive with a monoglycerin fatty acid monoester or the like. SOLUTION: This preparation comprises a hydrophilic food additive, e.g. organic acid (salt), amino acid or the like, which is coated with monoglycerin fatty acid monoester and/or diglycerin fatty acid monoester. The monoglycerin fatty acid monoester has an 8-12C fatty acid, diglycerin fatty acid monoester has a 14-22C fatty acid, and monoglycerin fatty acid monoester and/or diglycerin fatty acid monoester are contained in a wt. ratio of 1/99 to 99/1 relative to the hydrophilic food additive. Preferably, the preparation for food additive is produced as powder by mixing and stirring a solution of the monoglycerin fatty acid monoester and/or diglycerin fatty acid monoester with the hydrophilic food additive, and treating the resultant dispersion solution by, e.g. spray cooling. Also preferably, the powdery preparation is added to and mixed with the food which it tries to preserve. |
