PROBLEM TO BE SOLVED: To provide a process for producing a soy sauce in a state efficiently separable from lees, a process for producing a soy sauce having high quality and a process for producing a soy sauce capable of preventing the pollution problem caused by the lees generated by the production of soy sauce. SOLUTION: The objective process for the production of a soy sauce comprises a step of mixing a suspension liquid containing a soy sauce liquid and lees with ethanol to precipitate the lees and separate the suspension into the precipitate and the supernatant and a step of recovering the supernatant from the suspension separated into the supernatant and the lees. |
