PROBLEM TO BE SOLVED: To provide a germinated unpolished rice enriched with γ-aminobutyric acid and effective for taking the valuable components of unpolished rice such as vitamins, minerals and dietary fibers together with γ-aminobutyric acid and provide flour of germinated unpolished rice enriched with γ-aminobutyric acid and resistant to the deterioration of quality caused by the long-term storage. SOLUTION: Unpolished rice is germinated to obtain rice having enriched γ-aminobutyric acid. The germinated unpolished rice having enriched γ- aminobutyric acid is dried and crushed to obtain flour of germinated unpolished rice enriched with γ-aminobutyric acid. The germination of unpolished rice enriches γ-aminobutyric acid and facilitates the cooking to expand the application field of cooking. The rice can be processed to further increase the variety of foods by drying and crushing the rice in the form of rice flour. The product enables the taking of valuable components of unpolished rice and γ-aminobutyric acid and is storable for a long period without causing the deterioration of quality.
