PROBLEM TO BE SOLVED: To produce a mayonnaise-like food filled in a container, capable of keeping the taste and flavor of the freshly produced product over a long period and having improved commercial value by including a soluble egg shell membrane. SOLUTION: The objective food is produced by including a soluble egg shell membrane having an average molecular weight of 200-1,000, preferably 200-500 and obtained by hydrolyzing an egg shell membrane collected from fowl egg, dried egg shell membrane or pulverized egg shell membrane with an acid such as hydrochloric acid, an alkali such as sodium hydroxide, an enzyme such as proteolytic enzyme, etc., or their combination. The content of the soluble egg shell membrane is preferably 0.01-1 wt.% in dry basis based on the total weight of the mayonnaise-like food and the container for holding the mayonnaise-like food is preferably a soft container made of polyethylene, polyethylene terephthalate, etc. |
