Powders comprising a protein fraction containing gliadine and a vegetable component (I) rich in polar lipids. (I) preferably contains 50-80 % lipids, especially 50-65 % glycolipids including glycosylceramides, 5-12 % , especially 8-10 % ceramides including glycosylceramides, and 20-40 %, especially 30-35 % phospholipids. The protein fraction preferably comprises over 70 % gliadine. The powders are preferably in the form of a dispersion of the lipid in the proteic fraction.
