PROBLEM TO BE SOLVED: To prepare an oil and fat composition prevented from bubbling in fry cooking, excellent in cooking workability, having a long life in fry cooking and useful as general-purpose cooking oily by making the composition include a triglyceride as a principal ingredient, and a diester of a specific fatty acid with glycerin or the like. SOLUTION: This oil and fat composition is prepared by including a triglyceride as a principal ingredient and (preferably 0.2-5 wt.%) diester of at least one kind as constituent fatty acid selected from the group consisting of caprylic acid, capric acid, lauric acid and myristic acid with glycerin and/or diglycerol (e.g. diglycerol of both caprylic acid and capric acid, or the like). The diester preferably is prepared by steam distillation under reduced pressure at a temp. of >=140 deg.C and preferably has an acid number of <=0.2. Rape-seed oil or the like is used as a glyceride mainly comprising the triglyceride. |
