PROBLEM TO BE SOLVED: To provide a soybean curd product containing fibrous components and capable of effectively utilizing material resources and increasing nourishment of the soybean curd, and having gloss on the surface and excellent texture and durability, and a method for producing the product. SOLUTION: This soybean curd product is obtained by shucking soybeans or green soybeans with a peeler, irradiating microwaves, pulverizing by a pulverizer, and further irradiating ultramicrowaves, then adding water to the resultant fine powder, thus stirring, heating and adding a coagulant to the powder in a state of containing bean-curd refuse as the fibrous components to coagulate. The soybean curd product contains the fibrous components and therefore nourishment is abundant and has excellent texture and durability because of using the fine powder. |
