PROBLEM TO BE SOLVED: To provide a pressed Sushi utilizing a sandfish of a noted product in Akita prefecture. SOLUTION: This sandfish Sushi is obtained by heat sterilizing a solution comprising 1-3% of acetic acid, 1-2% of lactic acid and 2-6% of rice malt, dipping a cut meat of the sandfish in the solution and combining the cut meat with Sushi-rice. |
