PURPOSE: A dry and evaporation concentrator is provided to dry and evaporate fruits for concentrating by using the heat pump cycle, thereby reducing energy consumption and resolve the environmental pollution by using water as the heat transmission medium. CONSTITUTION: A dry and evaporation concentrator includes a condenser(2) for condensing fruits compressed by a compressor(1), an evaporator(4) for evaporating the fruits condensed by the condenser while passing through an expansion valve(3), a dry and evaporation concentrator(10) for drying and evaporating moisture of the fruits by the heat dissipated from the condenser, and a moisture condenser(11) for condensing the moisture evaporated by the dry and evaporation concentrator by the heat absorption of the evaporator.
