PROBLEM TO BE SOLVED: To evaluate a bubble holding property for a beer bubble layer with the same thickness based on the bubble holding time. SOLUTION: This bubble holding time evaluating device is constituted of spacers partitioning the cups on a small table mounted with reference cups to surround them from the inside, a turntable provided with a wind shield hood arranged near the upper edges of the cups, a pouring means 10 pouring a fixed quantity of beer to the cups to form the reference bubble layer thickness value, a measuring means acquiring image information with cameras provided above and on the side of the cups and measuring and storing the bubble layer thickness value and bubble holding time of the beer in the cups, and a controller adjusting the beer pouring height so that the measured bubble layer thickness value approaches the reference bubble layer thickness value, pouring a fixed quantity of beer again to obtain a sample, and measuring and storing the bubble layer thickness value and the bubble holding time for multiple samples. The bubble holding time corresponding to the reference bubble layer thickness value is evaluated based on the graph of the bubble holding time against the bubble layer thickness value for multiple samples.
