PURPOSE: A making method of sundae (Korean sausage made of beancurd, pork and glass noodles with green onion and green bean sprouts stuffed in pig intestine) is provided, which controls a water content of the glass noodle to settle the noodle in the intestine. CONSTITUTION: The method is characterized in the following steps: (i) soaking glass noodles in 15°C of water to soften the noodles; (ii) selecting all sorts of spices and cutting the soaked noodle; (iii) frying the noodles and mixing with the spices including blood from a slaughtered animal, starch, hog fat and a seasoning; (iv) filling the intestine with the mixture and steaming the stuffed intestine at 100-150°C; and then (v) cooling and packing the sundae product. |
