PURPOSE: A process for producing Kimchi using heated vegetables is provided which can be used as a food for a diet, curing a constipation, high pressure patients, kidney trouble patients because an amount of salt can be controlled by using the process. CONSTITUTION: The Kimchi is produced by heating vegetables such as a cabbage, a radish, a cucumber, etc. at 50°C or more in water or soup and then mixing the heated vegetables with the Kimchi juice, a seed bacteria of a lactic acid bacteria, vitamin C, and various spices and condiments.
