PURPOSE: A making method of complex enzyme material extracted from a persimmon that can be added to various foods is provided to neutralize the effects of poison and maintain freshness of the food. CONSTITUTION: The method is characterized in the following steps: (i) washing sorted persimmons, peeling and cutting the persimmons into pieces; (ii) separating persimmon juice by pressing the cut fruit; (iii) fermenting the fruit juice in a culture medium at 15-20°C for 1month after inoculating edible germ; and then (iv) mixing concentrated and powdered fruit juice with powdered whey proteins and packing the mixture. The complex enzyme material is added to liquors, beancurd, coffee, canned food, cooking oil, dairy goods, fried goods, kimchi, fruits, marine products and so on. |
