PROBLEM TO BE SOLVED: To obtain a lysozyme-saccharide conjugate that further enhances the antimicrobial activity that the egg white lysozyme intrinsically has and shows also the antimicrobial activity against the gram-negative bacteria and excellent heat resistance, thus is useful as medicines, cosmetics, food products by isolating saccharides from egg white and purifying them. SOLUTION: The objective lysozyme saccharide conjugate is separated from the egg white liquid, for example, raw egg white that contains one or two or more kinds of disaccharides selected from sucrose, lactose, maltose, trehalose and cellobiose, is sterilized at such a degree that the egg white may not be thermally denatured. This lysozyme-saccharide conjugate forms its structure through the covalent bonds, ionic bonds, coordinate bonds, hydrogen bonds and the like and is separated and purified by the gel filtration, the cationic ion-exchange chromatography, the salting out or the like. |
