PROBLEM TO BE SOLVED: To reduce furs sticking to a pan, facilitate washing of the pan, stabilize the production of a fragrance and a reactional state, shorten the process time and reduce operation labor force by placing an edible oil, a solid spice and a seasoned Miso in a screw conveyor and heating the materials at a specific temperature. SOLUTION: A solid spice is preferably pre-fried with an edible oil and the pre-fried solid spice together with a seasoned Miso is then placed in a screw conveyor and heated. The solid spice and the seasoned Miso are respectively separately pre-fried with the edible oil and the pre-fried solid spice and the pre-fried seasoned Miso are placed in the screw conveyor and heated at 90-140 deg.C to produce a fried seasoning. The solid spice is preferably pre-fried until the moisture content thereof reaches <7.5% or the water activity thereof reaches <0.7. |
