PROBLEM TO BE SOLVED: To efficiently and continuously prepare a microsphere which has a particle size of tens of micrometers and comprises uniform, high-melting natural fats. SOLUTION: High-melting fats are heated to a temperature above the melting point to yield a liquid. A dispersion phase comprising the liquid high-melting fats is pressurized and dispersed in a continuous phase via multiple microchannels having a fixed width to form an emulsion. The continuous phase is removed from this emulsion to recover a microsphere of high-melting fats.
