PROBLEM TO BE SOLVED: To obtain the subject emulsified composition to prevent oxidation for emulsifying, dispersing, washing or foaming process by using a specific compound having a long-chain alkoxy group and phenolic hydroxyl group in the molecule. SOLUTION: This composition is obtained by emulsifying 2-alkoxy-1,3- dihydroxyphenol derivative shown by the formula [R is a (substituted) 1-100C alkyl], e.g. 2-octyloxy-1,3-dihydroxyphenol, and 2-alkoxy-1,3-dihydroxyphenol derivative, or a mixture of two or more of these compounds or their ions. The compound shown by the formula can be obtained by, e.g. etherifying the hydroxy group of gallic acid with, e.g. a straight-chain alkyl bromide. Use of the compound shown by the formula allows to freely control antioxidation function of the compound by changing chain length of R without changing the aromatic structures other than that associated with R in the emulsified product.
