PROBLEM TO BE SOLVED: To obtain a simply usable composition having both functions of thickening and gelation to a liquid food such as oolong tea, orange juice or cow's milk by making the composition include xanthan gum and locust bean gum in a specific proportion as essential ingredients. SOLUTION: This composition is obtained by including 3-6 pts.wt. of xanthan gum and 1-3 pts.wt. of locust bean gum as essential ingredients. Furthermore, salts (preferably an organic acid salt such as calcium lactate) in an amount of <=5 pts.wt. are preferably contained in the composition. The composition is useful for thickening and gelling a liquid food such as green tea, black tea, toasted green tea, a vegetable juice, an Osui-mono (a clear soup without Miso containing fairly expensive ingredients such as prawns or clams) or a soup. |
