PROBLEM TO BE SOLVED: To provide a pan which causes broth to be sucked not by a method of increasing the internal pressure and penetrating the broth by undue forcing like with the conventional pressure cooker but by lowering the internal pressure of the pan and enables a user to make food boiled and seasoned in an extremely short time with lesser fuel. SOLUTION: The air pressure in the vacuum pan 3 is lowered by a vacuum pump 4 and an adequate vacuum degree is generated by a vacuum regulating safety valve 2 in order to drop the air pressure in the pan. The moisture of the umami (taste) from the broth is made to remain by this adequate vacuum and the penetration of the broth is rapidly enhanced.
