PROBLEM TO BE SOLVED: To provide the subject salmon roe product which was thermally sterilized at a low temperature and has high safety, good thermal stability and good roe shape retainability. SOLUTION: This method for producing the salmon roe product thermally sterilized at a low temperature comprises a process for pickling salmon roe in a pickling solution containing a sugar and/or a sugar alcohol in high concentrations, a process for treating the pickled salmon roe with a thickener solution, and a process for sterilizing the treated salmon roe at a low temperature. The salmon roe product thermally sterilized at a low temperature and its frozen product can be thawed and heated using a microwave oven or in hot water. |
