<p>PROBLEM TO BE SOLVED: To thaw frozen food by preventing reduction of quality with keeping cost minimum and enabling to efficiently and completely thaw the foods by passing through a specific dielectric heating process and a specific external heating process. SOLUTION: Frozen foods F are thawed through a dielectric heating process P1 which rises a temperature to a latent temperature zone by dielectric heating and an external heating process P3 which rises the temperature to that higher than the latent heat zone from outside through a heating medium. The latent temperature zone means a temperature zone in which water inside of a body (water in cellular tissues) presenting in the foods begins to freeze (an equilibrium phase transfer between water and ice takes place). In this temperature zone, ice crystals and water coexist in the cellular tissues. At temperatures less than the temperature zone, water in the foods is frozen and water in the foods becomes a liquid phase at temperatures above the temperature zone.</p> |
