PROBLEM TO BE SOLVED: To obtain a colza oil having improved oxidation stability and controlled emission of heating smell by using a specific colza seed as a raw material and making the colza oil include a fatty acid composition having a high oleic acid content and a low linolenic acid content. SOLUTION: This colza oil uses colza oil seeds belonging to the species Canola and has the total acid composition of 70-85 wt.% of oleic acid 0.5-5 wt.% of linolenic acid and optionally 1-5 wt.% of palmitic acid. Canola 46A40 (Canola 46A40) (registered in Variety Registration Office, Variety Section, Plant Health and Production Division, Canadian Food Inspection Agency) is preferably used as the colza seed belonging to the species Canola. The colza oil can be produced for example, by a method for pressing or extracting a colza seed belonging to the species Canola to give a crude oil and purifying the crude oil to give a purified colza oil. |
