摘要 food industry. SUBSTANCE: invention relates to cooling beverages and is illustrated by process of production of malt beverage prepared by fermentation. After initial materials are mashed with water, resulting mash is subjected to isolation of wort upon heating. Wort is boiled, cooled, and fermented into bear, which is further processed, in particular ripened to give final product. Process is distinguished by that bear is subjected to cooling operation consisting in rapidly cooling it to temperature close to freezing temperature to form minimal amount of ice crystals. Cooled bear is mixed during short period with bear suspension containing ice crystals with no increase in amount of ice in the mixture, from which the thus treated bear is then extracted.
