PROBLEM TO BE SOLVED: To advance the automation in a process from die cutting of a dough for a Japanese cracker to drying of the dough, reduce the cost and further improve the quality. SOLUTION: This system is equipped with a pallet automatic separating and discharging machine 16 and a pallet automatic stacking and discharging machine 17, a die cutting and flattening machine 18 for a Japanese cracker capable of preparing a dough for the Japanese cracker and placing the dough on a rectangular net surface of the pallet arranged between the pallet automatic separating and discharging machine 16 and the pallet automatic stacking and discharging machine 17, carriage type dough drying machines 60 and 61 for housing plural carriages having pallets carrying the dough for the Japanese cracker taken from the pallet automatic stacking and discharging machine 17 and stacked on the carriages in a mutually opposed state of the carriages having openings of lateral edge plates of the pallets stacked on the carriages, making warm air passing through the openings alternately flow and drying the dough for the Japanese cracker and further a dried dough taking out machine 62 for tilting the carriages with the pallets after completing the drying stacked thereon, applying vibration thereto, thereby dropping and discharging the dried dough and recovering the dried dough.
