PURPOSE: A fermented drink using the extract of vegetable and herbal medicine and Lactobacillus plantarum includes abundant nutrition of vegetable and herbal medicine to improve health and prevent diseases, and contributes to the income growth of vegetable of farming families. CONSTITUTION: A fermented drink of lactic acid using vegetable and herbal medicine is prepared by: extracting juices of vegetable such as tomato, legendary hermit plant, and carrot and herbal medicine such as ginseng, angelica gigas, medicinal herb or rehmannia glutinosa, and centrifuging at 2,000-3,000rpm for 8-12 minutes and filtering; adding glucose 1.48-1.57 wt%, the mixture 18.25-27.67 wt% of sugar and Oligosaccharide in the ratio of 3:1 to the extract to reach 25-27 Brix which is suitable for lactic acid bacteriums' fermentation; injecting Lactobacillus plantarum and cultivating at 36-37.5°C for 24-30 hours for the sweetness to reach 53-57 Brix finally; sterilizing at 80-90°C for 8-12 minutes. The vegetable to be used consists of tomato 46.77-50.30 wt%, legendary hermit plant 13.83-14.73 wt%, and carrot 8.10-8.67 wt%. The herbal medicine comprises ginseng 1.69-3.50wt%, angelica gigas 1.18-3.07wt%, and medicinal herb 2.98wt%.
