PROBLEM TO BE SOLVED: To evaluate the characteristics of a sheet, etc., with a 'SOFTNESS' index. SOLUTION: A softness evaluating device is provided with sensor assemblies 10 each composed of a deflection sensor 1 which are formed of a plurality of strain gauges formed on the basis of a belt-like thin steel sheet, etc., and measure the quantity of deflection (ΔL) of each cross-sectional section of a sheet, etc., and a pressure sensor 2 which measures the pressure value (P) at the same position as the installed position of the sensor 1 simultaneously with the quantity of deflection (ΔL). A plurality of sensor assemblies 10 is integrated and set up on the sheet, etc. The evaluating device is also provided with an arithmetic means 3 which performs prescribed arithmetic operation based on the quantity of deflection (ΔL) and pressure value (P) measured by means of the sensors 1 and 2 and, at the same time, calculates a peculiar index 'SOFT NESS' and a displaying means 4 which displays the 'SOFTNESS'.
