PROBLEM TO BE SOLVED: To retain a fresh taste for a long period by selling a juice pressed from a bitter orange in the form of a sherbet and preserving the juice in the form of the sherbet in a freezing cabinet. SOLUTION: This method for producing a sherbet-like juice pressed from a bitter orange comprises a first step for pressing a fruit 1 of a sour orange and providing a pressed juice 2 with 20-80 wt.%, preferably 30-60 wt.% moisture content from the fruit 1 in the atmosphere, a second step for housing the pressed juice 2 in a primary crystallization vessel 5 in a freezing cabinet 4 so as to provide 5-10 cm depth, freezing the pressed juice 2 at -38 to -50 deg.C temperature for 30-60 min and affording a primary crystal material, a third step for taking out the primary crystal material from the freezing cabinet 4, crushing large crystals, mixing the resultant crystal material by stirring, reinserting the mixed crystal material in the freezing cabinet 4, freezing the mixed crystal material for 15-30 min and providing a secondary crystal material and a fourth step for loosening the secondary crystal material so as to prevent sticking, housing the loosened crystal material in a sherbet container and affording the sherbet- like juice pressed from the bitter orange. |
