<p>PROBLEM TO BE SOLVED: To provide a method for producing an aerobically fermented mature by more actively proliferating aerobic microbes than by conventional methods to homogeneously dispersing and impregnating the microbes in organic raw formulas, enabling the production of the aerobically fermented mature having a better quality than those of conventional matures in largely improved fermentation efficiency without causing irregular fermentation, and to provide a device for producing the aerobically fermented mature. SOLUTION: This method for producing an aerobically fermented mature comprises disposing depressed grooves 3a, 3b, 3c on the floor surface 1 of a fermentation tank, laying air ducts 4a, 4b, 4c in the depressed grooves, receiving a perfectly aerobically fermented mature in the depressed grooves before the fermentation is started, downward forming air-blowing penetrated holes 5 in the air ducts and then blowing out air from the air-blowing holes toward the floor surfaces of the depressed grooves. It gives an extremely preferable result that a perfectly aerobically fermented mature prepared with a microbe culture product containing aerobically ultrahigh temperature microbes growing at a temperature especially above 85 deg.C is received in the depressed grooves.</p> |
