PROBLEM TO BE SOLVED: To obtain a jelly food excellent in transparency by preparing a jelly solution by using a solution containing a tannin such as an extract of black tea or green tea and a gelatinizing agent having calcium reactivity, and gelatinizing the prepared jelly solution. SOLUTION: This transparent jelly food obtained by gelatinizing a tannin- containing liquid is characterized by comprising a calcium-reactive gelatinizing agent, a calcium salt and sodium metaphosphate. The method for adding the calcium-reactive gelatinizing agent, the calcium salt and the sodium metaphosphate to the tannin-containing liquid, mixing the tannin-containing liquid with the added materials, and gelatinizing the obtained mixture is characterized by mixing the sodium metaphosphate with the tannin solution before mixing the calcium salt with the tannin solution. |
