PROBLEM TO BE SOLVED: To provide an efficient method for producing a grain-containing mustard capable of bringing about a desired pungent taste in a short time and having a large grainy feeling without bitterness. SOLUTION: At least one kind of ascorbic acid and its salt in an amount so as to provide 0.005-10 wt.% based on the whole grain-containing mustard together with an aqueous raw material is added to a roughly crushed material of a mustard seed when adding the aqueous raw material to the roughly crushed material of the mustard seed prepared by roughly crushing the mustard seed, then aging the resultant mixture for a prescribed time, thereby bringing out a pungent taste and producing a grain-containing mustard. |
