The present invention is directed to a composition comprising a first polymer comprising arabinosyl-substituted (1-4)- beta -xylopyranosyl units cross-linked to a second polymer comprising D-galacturonic acid units. A composition comprising co-gelled first and second polymers, the first polymer comprising arabinosyl-substituted (1-4)- beta -xylopyranosyl units and the second polymer comprising D-galacturonic acid units is also embodied by the present invention. Products comprising the foregoing compositions are also contemplated by the present invention.
