The present invention relates to water-soluble sterol derivatives for inhibiting cholesterol absorption and process for preparing the same. The process for preparing the phytosterol derivatives of the present invention comprises the steps of: obtaining intermediate compounds by reacting phytosterols and succinic or glutaric anhydride in a non-polar solvent in the presence of a basic catalyst; and, coupling the intermediate compounds with hydrophilic polymers in a non-polar organic solvent in the presence of a basic catalyst and a coupling agent. The phytosterol derivatives of the invention may be incorporated directly in water-based foodstuffs (e.g., beverages) in any conventional manner.
