Reducing the methanol content of fruit brandies comprises a two stage distillation process comprising: (a) a first distillation stage (T1) which produces a bottom stream (3) of water, ethanol and heavy aromatics and a distillate (2) containing methanol and light aromatics that is fed to a second column; and (b) a second distillation stage (T2) where the distillate is separated into a bottom stream (5) of methanol and water and a distillate (4) of light aromatics which is mixed with the bottom stream from the first column.
