PURPOSE: An instant rice and duck soup and a preparation method are provided to be readily cooked in any place. It is rich in nutrients such as calcium phosphate, organic substances and minerals, therefore used to provide essential nutrients to children on the growth and prevent the older from osteoporosis. CONSTITUTION: An instant soup is produced by comprising following steps of: removing the feather of the duck and boiling the duck with a ginger and cinnamon for 10-15 minutes; isolating bones and meat and discarding residual water; further boiling the bone in a pressure cooker at 100-150°C for 2-3 hours followed by finely grinding the boiled bone; boiling the mixture of the boiled water, the ground bone, meat, a sweet potato shoot, a ground garlic, a ground ginger, soy paste etc. and two volume of water to obtain a sterilized duck soup; evaporating 40-50 % of moisture of solid in soup and evaporating 70-80 % of moisture of liquid in soup at 60-70°C to obtain a stock solution; immersing the boiled rice in the stock solution for 1-3 minutes and drying in a natural draft for 2-3 hours; mixing and stirring the solid in soup, the stock solution and the rice to obtain the boiled rice served in duck soup of paste type; charging the boiled rice served in duck soup in the container by 200 g and then freezing rapidly; drying the instant soup to contain 2-4 % of moisture.
