PROBLEM TO BE SOLVED: To provide a preservative which is used for foods, can enhance the preservability of foods, is highly safe, and does not deteriorate the qualities of the foods, and to provide a method for preserving the foods. SOLUTION: This preservative for foods comprises a sunflower seed extract extracted with a 30-90 vol.% ethanol, methanol or acetone aqueous solution, and one or more kinds of compounds selected from the group consisting of organic acids or their salts, amino acids, antibacterial peptides or proteins, sugars, polysaccharides comprising saccharic acids and amino sugars, and their partial hydrolysates, spices or plant ingredients, alcohols and bacteriocin compounds. The method for preserving the foods comprises adding the preservative to the foods.
