PROBLEM TO BE SOLVED: To attain sterilization without deteriorating the aromatic component and quality of excellently brewed spirits or the like by impressing AC on the spirits to be treated, permitting them to generate heat and executing heating and sterilizing by means of Joule heat when the spirits are heated and sterilized. SOLUTION: When the spirits are heated and sterilized, AC is impressed on an object to be treated (spirits) to generate heat by itself and to execute heating and sterilizing through the use of Joule heat. A batch-wise method or a continuity method is possible as the one for Joule heating. In the case of the latter, a method including a supply process for supplying the spirits to a heating part quantitatively and a heat generating process for supplying power to an electrode which is formed as a pair with the heating part and is arranged in parallel with it and for generating Joule heat in the object is adopted. In the case of the batch-wise one, a Joule heating device is properly used, SAKE is put in a heating vessel, it is heated by permitting a current to gradually flow in the electrode within the range of 0.1-10 A, the current is fixed when temp. becomes the target one, the temp. is kept for a fixed time and, then, a sterilization processing is executed.
