PROBLEM TO BE SOLVED: To obtain an additive for boiled rice capable of providing boiled rice with a suitable elasticity, improving mechanical resistance, useful for rice balls, or the like, by making the additive include edible oils and fats, a glycerol succinic acid fatty acid ester and a sucrose fatty acid ester. SOLUTION: This additive for boiled rice comprises (A) edible oils and fats such as soybean oil, (B) preferably 1-3 wt.% of a glycerol succinic acid fatty acid ester having a 14-22C fatty acid composition, 79-95 wt.% of unsaturated fatty acids in the whole constituent fatty acids and >=70 wt.% of oleic acid in the whole unsaturated fatty acids, (C) preferably 0.1-0.5 wt.% of a sucrose fatty acid ester (preferably 6-8 HLB) and preferably further (D) 10-25 wt.% of a glycerol fatty acid diester. |
