PROBLEM TO BE SOLVED: To obtain a Miso (fermented bean paste) or a processed Miso food having high quality and improved commercial value while suppressing, preventing or controlling the browning trouble during the period from the production to the distribution by compounding a Miso with a substance such as a sulfur-containing compound, a compound having an enediol structure. SOLUTION: The objective Miso is compounded with (A) one or more sulfur- containing compounds selected from glutathione, glutathione-containing yeast, reduced glutathione, cysteine and cystine in an amount of preferably 0.001-5.0 wt.% and (B) one or more compounds having enediol structure and selected from ascorbic acid, sodium ascorbate, calcium ascorbate, erythorbic acid and sodium erythorbate in an amount of preferably 0.5-5.0 wt.%. The Miso or the processed Miso food is preferably sealed in a packaging material composed of a gas-barrier film. |
