PROBLEM TO BE SOLVED: To provide a method for industrially efficiently producing high-purity xylitol in a shortened facility while suppressing lowering of yield by using a xylitol-containing natural product as a raw material. SOLUTION: This method for producing xylitol comprises a first process for obtaining an extract containing xylooligosaccharide as a main component by removing a component previously extracted with hot water heated to <=110 deg.C and <=140 deg.C from a xylan-containing natural product and treating the resultant water-insoluble residue with hot water heated to <=200 deg.C and a second process for hydrolyzing the extracted solution and then hydrogenating the hydrolyzate or simultaneously carrying out the hydrolysis and the hydrogenation. |
