PROBLEM TO BE SOLVED: To provide a method for producing soybean milk which has high concentration and remarkably lowered viscosity, without using any large-scale apparatus or equipment, and to obtain soybean milk by the above method. SOLUTION: This method for producing soybean milk comprises a process using soybean milk produced from soybean or soybean processed product(s) in place of water medium used in the case of triturating green soybeans. By the above method, soybean milk with high concentration can be produced without increasing its viscosity. By using the soybean milk with high concentration, bean curd which is rich in sweetness, flavor and nutrition inherent in soybean and has good hardness, shape retention and smooth palate feeling is inexpensively and efficiently produced. |
